Pig feet are quite a specific product. Incredibly jelly, with a pronounced taste, they are the main ingredient for a fairly large set of dishes. Today we will talk about probably the simplest option for cooking – boiled pork trotters. By the way, recently I was talking about how to cook pork ears correctly, and these recipes echo many points.
Before boiling pig’s feet, we must prepare them well. First we wash the hooves a little and leave them in water for 30-60 minutes.
During this time, the top layer of skin will be soaked and it will be easier for us to clean our legs. Soaked feet start scrubbing with a knife, trying to clean all the dark spots and coarsening of the skin. It’s best to do this under a tap by washing off the detached particles with a jet of water.
The more sensitive you are to this procedure, the cleaner the pig’s feet are, and the more pleasant they will be to eat. It took me about 15 minutes to wash 4 of them.
Then we burn the bristles on the pig’s trotters. You can use a gas burner, lighter, gas hob or any other available flame source.
Gently, so as not to get burned, we get rid of all the hairs that are visible on feet. I did the procedure with a lighter and over the gas stove. It is desirable to rustle on the balcony or when the hood is on, so as not to bother the apartment.
And once again, scrape the legs to clean the soot.
Now, having passed all the cleaning procedures, we are ready to cook pork legs. To do this, we put them in a pot and pour water so that they completely cover the trotters.
Take the water with a reserve, because during the cooking time it can boil well. Add spices to the legs, and pre-cooked vegetables – I use carrots and onions, but if you want, you can also add other vegetables, such as celery.
We put on the fire and start cooking. Bringing to the boil, salt, reduce the fire to a small, and leave for 2-2.5 hours.
After a proper time we get flavorful boiled pork legs, which can be eaten as a separate dish, with side dish or used as ingredients for aspic.
The legs boiled in this way are not only tasty, but also healthy, because they contain a lot of collagen.
