You can tell from our blog that we’re big sweet tooths. That said, even the most trivial things we sometimes try to reproduce at home. Such was the case with classic condensed milk. We tried several recipes before finding the perfect one that combines simple ingredients, gorgeous consistency and flavor. And of course, the preparation process is as easy as possible, so it’s accessible even to novice cooks.
All we need to make homemade sweetened condensed milk is to mix the ingredients and keep them on a low heat. Control the portion size yourself, but most often we make it with 400 ml of milk. If you want to cook with 1 liter of milk, multiply all the ingredients by 2.5 accordingly. The fat content of milk can be any, but the most popular version is up to 3%. Since we will also use butter, this is enough to make the condensed milk not disgusting.
The sugar is 1 to 1 with the milk. This is enough to make the condensed milk moderately sweet, not sugary. I always use regular white sugar, which is made from beets.
It seems to me that for such a simple dish it makes no sense to use more refined options. As already mentioned, we will add a piece of butter to the homemade sweetened condensed milk. For 400 ml of milk, 40 grams of butter with a fat content of 82.5% is enough.
In the output, the combination of butter and milk will make the condensed milk very similar in taste to the version made with cream. That said, these ingredients are almost always available at home. Vanillin will add spice to sweetened condensed milk. Just a few pinches will make the sweetness much more flavorful. If you have only vanilla sugar, add about 30 grams, based on 1 liter of milk. Pour all the ingredients and pour them into a saucepan.
I recommend using a thick-bottomed saucepan or nonstick containers to minimize the chance of a burnt taste. Place the pan on low heat and simmer for 20-25 minutes.
As soon as the butter and sugar begin to dissolve, stir the mixture with a whisk or silicone spatula. Next, also stir the sweetened condensed milk periodically so that it does not begin to stick.
For the same reason, the fire must be low. After 15 minutes, the mass will begin to thicken and linger on the spoon. This is a good sign that we are doing everything right. After another 10 minutes we leave the condensed milk to cool.
You can eat it when it has cooled to room temperature, but I highly recommend putting it in the refrigerator. Then we get that sweetened condensed milk that you just can’t tear yourself away from.
It will be more viscous and can be used as a cake spread or to make cake pops with it. I will note that we did not add any thickening agents, such as starch or powdered milk, to the condensed milk. And that’s why our sweetness tastes so much nicer.
