Rum Balls have been a favorite dessert since our grandparents. In the CIS countries, it is called “pirojnoe kartoshka”, which means potato cake. All because of the appearance of the dessert. That said, in today’s world, with thousands of sweet dishes available, it is still popular. And in this recipe, I want to show one of the variations of the dessert that you can eat on a diet – Healthy Rum Balls.
Unlike the classic version, we won’t use sugar, alcohol, or other ingredients that don’t fit the healthy diet. At the same time, even without condensed milk, the cakes will turn out delicious, moist and sweet.
The diet potato cake is made in two steps. First, we prepare the batter and bake the sponge cake. And at the same time we start making the cream, which will replace the sweetened condensed milk in the recipe. For the biscuit batter, we will need 4 eggs (230 g), yogurt (200 g), flour (100 g), cocoa (20 g), soda (6 g) and stevia (10 g).
Now let’s go over the ingredients in detail. Yogurt should preferably be low-fat and not too thick. In my case, it is homemade yogurt with 1% milk. I recommend using a mix of flours to make it tastier. I have a mix of oats and corn at a ratio of 60% to 40%. Control the amount of stevia according to its sweetness.
If you don’t have oat flour at home, simply grind oatmeal in a blender or coffee grinder. That’s exactly what we did for the Healthy rum balls.
Tip
The first thing we do is to whip the eggs together with the stevia. I use a blender and keep beating until the mixture is smooth and airy.
This is exactly the condition that will give puffiness to the future biscuit. On top I begin to sift the flour and stir gently. Our task is to achieve homogeneity, but without losing airiness.
So work carefully with a spoon or spatula. Now sift in the cocoa and pour in the yogurt.
We get a rather liquid mass. But do not be afraid, this is the perfect consistency of biscuit dough. It has to be poured into a tall mold. I will use a silicone mold, which you can read about in the article Kitchen Goods from Aliexpress.
To prevent the batter from sticking and to make it easier to take out, grease the surface with a little vegetable oil. Pour the dough into the form and put it in the preheated oven for 30 minutes. Bake at 190°.
Now let’s move on to the sweet, yet dietary cream.
First, we fry the skim milk powder (SMP), the starch, and the stevia over low heat. I prefer to use a thick-bottomed saucepan to keep the mixture from burning. This procedure will add caramel flavor and aroma to the cream. While frying, constantly stir the milk powder with a whisk or spatula.
Then we add a little milk and keep stirring. We need to add the liquid so that the powdered milk does not take up lumps. Boil the cream until it is thick, without stopping to stir the contents.
If you did everything according to my steps, you will get the biscuit and the sweet cream ready at about the same time. Since they are hot and you can’t work with them, let them cool down. About 15-20 minutes should be enough.
To prevent the cream from drying out during cooling, you can cover it with clingfilm. In doing so, pull it directly on the surface so that there is no air access.
Tip
When the biscuit has cooled, it needs to be crumbled. This can either be done by hand, rubbing small pieces of dough with your fingers. Or use a blender. The blender is a little faster, so I use that option.
The only thing is, do not whip the biscuit for too long, or you will get the wrong consistency. In our case, we need a crumb, not a homogeneous mass. Add sweet healthy cream to the biscuit crumbs and mix until smooth.
We get a fairly dense, but moist and pliable dough. We divide it into portions of the same size and start rolling out the balls.
This is our diet potato cake. Adjust the size and weight of the dessert to your taste, but most often, it is 50-100 grams for one ball. You can glaze or sprinkle the outside of the Rum Balls.
Since we are making a diet recipe, I will use coconut shavings. It holds up quite well to moist and sweet dough. Sweet Rum Balls turns out to be less calorie-dense, unlike its classic version, and at the same time more healthy. But the taste remains at a high level. Some people won’t even notice that this product is dietary and contains no sugar or wheat flour.
