Probably, everyone who used store mayonnaise for more than 10 years, watched the picture as it became thicker and more pronounced “chemical” taste. It has almost ceased to melt at high temperatures, such as in the oven. And most importantly, the composition of such a product grew from 5 ingredients, to 10-15 and more.

So today I will tell you how to cook a great homemade mayonnaise in 5 minutes, which can be used in cooking or eaten as a separate sauce.

So, how to cook mayonnaise at home? We need the following ingredients: eggs, oil, mustard, salt, sugar and lemon juice. You can take chicken or quail eggs. In my case, there was a first option. If you want to do mayonnaise on quail eggs – replace each chicken egg with 2-3 quail eggs.

I use sunflower refined oil. Up to half of the oil volume can be replaced with olive Extra Virgin. There is no need to add more olive oil, as homemade mayonnaise will be bitter. And the last ingredient I want to discuss is mustard. I take the spicy store option, but you can replace it with mustard powder. Mayonnaise at home can be prepared with a whisk, mixer or blender. I believe that with an immersion blender cooking is the fastest and most convenient.

So we add all the ingredients to the container, such as a high glass or a can with a narrow bottom. Ingredients are desirable to take room temperature – this is the advice of cooks around the world. Then a good home mayonnaise is more likely to happen.

When whipping, mayonnaise increases in volume, so take a container of 3 times more than the total amount of ingredients.


We lower the blender to the bottom of the glass and turn it on at maximum speed. Beat for 30 seconds.

A miracle will happen before your eyes and the mixture will turn into a sauce of homogeneous consistency – homemade mayonnaise!

The finished product is transferred to a small jar, plate or used in cooking. As a result we get about 430 grams of ready mayonnaise.

Since we did not add any preservatives to the mayonnaise, it is stored at home for no longer than 5 days, in the refrigerator.

If desired, to the listed ingredients can be added to smelling herbs, garlic, hot pepper and other spices to taste.
