Not so long ago we posted a recipe for classic syrniki, and now we decided to add a healthy option, for all those who are on a diet or just stick to the healthy food. The cooking process has not changed much, as well as the taste of the final product, but there were some changes in the ingredients.

For starters, let’s choose cottage cheese. Of course, you immediately want to rush for skimmed cottage cheese, but absorption of vitamins in low-fat and skimmed versions of cottage cheese is much worse than in a product with medium and high percentage. That’s why it’s necessary to catch the golden mean between calorie and health. Ideally, take 5% cottage cheese, but I sometimes cook with 9%.

The next ingredient that needed to be replaced is flour. For the diet variant, we use whole wheat, rice, oatmeal, corn or any other ingredient that contains useful trace elements. If you wish, you can use a mix of several kinds. In this recipe I will cook healthy cottage cheese pancakes with rice flour.

And of course, we replace sugar with a sugar substitute or sweetener, depending on what you use. And to make the syrniki look like a real dessert, we will add some cinnamon and vanilla. The main thing is not to overdo it, so that the final result is not bitter.

Mix all the ingredients in a bowl and mix well with your hand. Knead until the dough becomes homogeneous and holds one big coma.

If you have a strongly liquid mass, add a little flour until you achieve a perfect consistency. This sometimes happens if the farmer cheese was very wet. When the dough is mixed, you can start making syrniki. To do this, divide the resulting mass into equal shares and roll out the balls from them. First, I do it in my hands, then I dip the ball in flour.

Then we put the workpiece on the table and start to press it gradually, giving it the shape of a washer. To make the syrniki round, we roll them around with our hands, as if making a fire by rubbing a huge stick. If we do it carefully, the syrnik will take even shape and will not fall apart.

At the very end, collapse the received cottage cheese pancakes in flour.

Now the serniki need to be fried. It is best to use a non-stick frying pan, a little greased with vegetable oil.

You can also cook syrniki in a multicooker or oven. But remember that in the oven you will not get a blush crust – such syrniki are more like a mini-cake.

To apply the oil evenly to the frying pan or other surfaces, and not to pour more than necessary – use an oil sprayer.

Tip

Heat the frying pan on medium heat and place syrniki.

We fry on a small fire for about 10 minutes. During this time, the side of the syrnik should be baked and covered with gold crust, without burning. We turn our dessert to the second side and wait another 10 minutes.

As a result, we get delicious and dietary syrniki, which are not inferior to its classic variant.

Believe me, most people who will try them, in life will not feel the change. You can eat healthy syrniki with yogurt, berry sauce or any other additive to your taste.
