Ingredients

Directions

  1. Separate the yolks from the whites.
  2. Mix the dough from the yolks, flour and ryazhenka. Add the pitted cherries.

  5. Bake the muffins in the oven, at 180°, for 25 minutes.

And speaking of sweets, it’s impossible not to touch on the subject of muffins. After all, it is one of the easiest baking options that requires a minimum of gourmet ingredients and personal time. And probably the most popular, besides the classic white and chocolate, are cupcakes with cherries. Because this berry is common in our area, and also because many people freeze it for the winter. In general, we can enjoy berry muffins almost all year round.

As I said, everyone on a diet probably has all the basic ingredients: flour, eggs, fermented dairy, and berries. I will be making it with oat flour (130 g). I think it has its own subtle flavor that goes great with sweet baked goods. I take chicken eggs, 2 pieces. I’ll elaborate on the fermented dairy. For the healthy muffins recipe suitable homemade yogurt, kefir or ryazhenka. I recommend exactly the products made at home, because they are delicious and much healthier than store-bought options.

I used ryazhenka to bake the cupcakes, so that the finished dessert would have the flavor of melted milk. You have to agree, it even sounds delicious! As for the berry, no one is stopping you from experimenting. We love sour-sweet options, so we often use cherries, but strawberries, raspberries, currants, will also make great muffins.

First, separate the yolks from the whites. We put the yolks in a bowl with the sifted flour. In the same bowl we add ryazhenka and almost all the dry ingredients: baking powder (1 tsp), stevia (1 tsp), and a pinch of cinnamon and vanilla each.

Stir to make a thick batter. Use a spoon, fork or hand whisk to mix.

Put seedless cherries into the batter, and stir again. If the cherries were frozen, you need to defrost them completely beforehand and drain off all excess liquid.

Now move on to the whites. They should be beaten with a blender along with a pinch of salt. Whip them until stiff peaks, when the egg froth holds its shape.

Now comes the delicate moment of adding the whites to the dough. Carefully take the foam and stir it into the dough in a reciprocating motion.

As a result, you will get a homogeneous, airy mass. Next, you need to put the batter into muffin tins. It is better to use silicone molds, as it is easier to take out the finished baking. But sometimes I also use additional paper forms, which I pre-lubricate with vegetable oil, for small silicone forms.

Fill the batter not to the brim, because you need to take into account that the dough will rise during the baking process. From the specified number of ingredients, I got 9 cherry muffins. Place the forms on a baking tray and place in a preheated 180° oven.

Bake the berry muffins for 25-30 minutes. You can check the readiness with a toothpick or dry stick – if the dough is not sticking, it means the baking is ready.

Finished healthy muffins with cherries have a caramel color and a fantastic sweet flavor.Preferably, remove them immediately from the molds so they do not become wet, especially if they are baked in paper forms. Let the muffins stand for 5-10 minutes to cool a bit and then serve them.

As an addition, you can use healthy condensed milk or any other dietary creamy topping.

Unlike their classic version, healthy sugarless muffins contain 2-3 times fewer calories per 100 grams of the finished product. Therefore, you can eat them without fear of gaining too much weight. So we can safely eat several muffins instead of one, and it’s worth a lot.
