How I love syrniki, in all their variations, and I am happy to share this love with you. Previously, we have already written on our website, how to prepare classic syrniki and healthy syrniki, intended for people who adhere to diets.
Today I will share the banana syrniki, which, personally, I discovered not so long ago. As for any other syrniki, we need cottage cheese. I take a crumbly store cheese, with a fat content of 5% or 9%. It must be moderately wet to be well whipped and moulded. If you have the opportunity, use homemade cottage cheese. The main thing is that it is fresh and does not contain any additives, which, lately, are often domesticated in the markets. We put the cottage cheese (400 g) in a bowl and add the egg and sugar (1 tbsp).
Whip all these ingredients with an immersion blender. If this is not possible, grind the cottage cheese well with a fork, and later knead the dough with your hands.
We add 4 tablespoons of flour to the obtained mass and stir it.
Flour can be used absolutely any at your discretion: wheat, rice, oatmeal. At this stage, you should get a dough that is well shaped and moulded.
If there is no flour at hand, grind the oatmeal in a blender or coffee grinder. This culinary life hack has saved me more than a dozen times.Tip
Now let’s prepare bananas. I recommend using fully ripe fruits, which have a rich banana flavor and are not tart. Cut them in small circles, and then another 4 parts. We get small banana triangles, which we add to the dough. Gently mix the curd and banana mass and move on to the next stage.
Pour flour on the table or board. On this surface we will form the syrniki. Do not spare the flour, because the syrnik should be well rolled from all sides. Next, we separate a piece of flour from the dough for one syrnik and start to roll it out. First, we make a ball in the hand, then we press it down and form a washer on the table.
Rotate syrnik with your palms and periodically flatten it to the table. In this way we get a banana cottage cheese pancake of perfect shape. We drop it on all sides in flour and put it aside to pour the rest.
Fry syrniki on a small or medium fire, depending on the size of the burner, put in a heated pan. I use a non-stick frying pan by spraying it with oil.
A kitchen sprayer can be used to spray oil and other liquids evenly. We fry syrniki for 6-7 minutes on each side. They should not burn, evenly frying to a rouge crust.
For work with non-stick frying pan, dough and other kitchen tasks, I recommend using a silicone spatula from Aliexpress. For a penny you get a functional tool that replaces the usual spatula.Tip
As a result, we get golden surfaces and a delicate curd and banana structure inside.
Banana syrniki come out lush and juicy.
They are very tasty in themselves, but you can supplement them with sour cream, jam or chocolate syrup. The combination of cottage cheese, banana and chocolate is generally one of my favorites, so I recommend it.
