Sweet Vitamin Salad

- Peel and grate the carrots and apples.

Vitamin salad is a dish that is so necessary for our body, especially during the cold season. More often there is a salty version, but I give preference to the sweet one. And children like this salad much more.
In fact, the sweet vitamin salad is an improved version of the apple and carrot salad we all know from childhood. Only it turns out more juicy, with a pleasant citrus flavor and aroma.
We begin by soaking the raisins. The harder they are, the more time they need to soak. Most of the time I leave the dried fruit for 10 minutes, after pouring boiling water over it.
Continue cooking and move on to grating carrots (1 piece) and apples (2 pieces). It’s good when the carrots are juicy and crispy, then the snack will be even better. You can take any apples you want. We prefer sweet and sour apples, but we often make it with regular sweet ones. You can adjust the ratio of carrots to apples, but I like it when the apple predominates. Before grating, wash the apples and carrots well and peel them with a knife or vegetable peeler.
For soft ingredients, it is advisable to take a coarse grater, so as not to turn vegetables and fruits into mush.
Tip
Another ingredient of the salad, which perfectly complements the dish with vitamins, micronutrients and healthy fats – nuts. Most often walnuts are used, since they are the most available in our region. But you can use any, mixing it to your liking. We put the nuts in a bowl and grind them with a mortar or a muddler.
I do not achieve the consistency of mush, but simply crumble the nuts to the size in which they are comfortable to eat in the salad. The same procedure can be done with a knife. We put the nuts to the grated carrots and apples. There we also send squeezed raisins from the water.
Now let’s make the dressing for the vitamin salad. We will use orange juice (3 tbsp), lemon juice (2 tsp) and honey (2 tsp). As you can see, it’s a great combination of sour and sweet.
To get more juice from the orange, roll it well across the table, pressing it down with your hand.
Next, we use a bar squeezer, a juicer, or just squeeze the juice by hand. My fruit is quite juicy and large, so one orange was enough. With a lemon we do the same procedure. Mix the juice of the orange, lemon and honey in one bowl. Mix well until the honey has dissolved and pour it into the salad. Now stir all the contents of the bowl so that the liquid envelopes the fruit and vegetables.
That’s how in 10 minutes we made a very tasty and healthy sweet vitamin salad. It is better not to keep such a snack for a long time, so I recommend making it in small portions and eating it right away. Although for us personally, there is no trace of it after 3 minutes of cooking.
