Banana Pancakes Recipe

Not so long ago, I wrote about how to cook classic pancakes. But there is another option, which is very popular in America, Canada and Europe – banana pancakes. As it is easy to guess, it is distinguished by the presence of mashed banana in the dough. We will also move away from the classic recipe and try to mix pancakes a little differently.
First we take ripe bananas (2 pcs.). I highly recommend taking a little darkened, because such fruits are not tart and have a rich flavor.
Add to the banana yolks (2 pcs), which were separated from whites. The whites are left in a separate dish for beating, we will get to them a little later. We mash the banana with yolks in a bowl, in which we will knead the dough.
It is best to use an immersion blender, but you can also do the procedure with a fork. We interrupt to a homogeneous state. Now add flour (200 g), sugar (50 g), leavening agent (2 tsp.) and a pinch of salt to the banana puree.
Also pour in the milk (300 ml) and start stirring everything. I use a mixer with a whisk, but you can do the whole procedure manually.
The last add melted butter (40 g) and continue to stir. We achieve a homogeneous consistency.
You can cook pancakes on any flour you like: wheat, rice, oatmeal. If you don’t have any flour at hand, you can knead dough and oatmeal with it in a blender.

Then beat in a separate dish the remaining 2 whites. We need to achieve stiff peaks to put the eggs in the dough.
Add whipped whites gently, a few spoons, gently stirring pancakes dough. Knead the total mass well, so that no foamy lumps of white are left.
Now we are ready to fry pancakes. As with standard pancakes, the banana version is also fried in a non-stick frying pan without oil. I note that the dough is more liquid, due to the banana puree, so it does not hold its shape so tightly, and the ready pancake is a little less lush. The fire must be average, so that the pancakes had time to bake, but not burned.
Hold on a couple of minutes on each side. As soon as the bubbles appear from above, you can turn the pancake over to the other side.
Depending on the size of the frying pan, you can fry a different number of pancakes at a time. It is most convenient for me to cook 3 pieces each.
I recommend eating banana pancakes with sweet sauces. Ideal is a homemade condensed milk, chocolate syrup or banana sauce, which I cooked at the same time with American pancakes.
“Banana Bomb” of pancakes and sauce is cool. I definitely recommend it for cooking. As you can see, the recipe of pancakes is very simple, and at the output we get a delicious thick pancake, but not dry and dense. This dish is suitable for both children and adults. In general, you should not put off – you need to go and cook, delighting yourself and your loved ones.
