Smoked Chicken Salad

Sometimes you want something rich, flavorful, but light and affordable. That’s exactly what a smoked chicken salad would be. We make it regularly when we stick to a healthy diet, but we also occasionally spoil ourselves during feasts and gluttony.
The concept of the salad is quite trivial. We gather the ingredients and combine them with the sauce. And it is in the sauce that the main success of this dish lies.
But let’s move in order. First, let’s boil the eggs (2 pieces), since this takes the longest time. We need hard-boiled eggs, but we can keep them not all 7 minutes, so that the yolk is not completely dry.
Now let’s decide on the lettuce. It is advisable to take something neutral in taste and not too tough. Most often a common leaf lettuce, iceberg, romaine, or chard beet leaves are used. Spicy salads, such as arugula, I don’t like very much in this dish. We make it from one standard serving of lettuce (180 g), ready to eat. If you bought a cauliflower or a bundle – rinse the greens well under water and cut off the desired volume. Next, chop in large squares, which will create the main mass.
Divide the eggs into white and yolk. The yolk goes in a container with olive oil (2 tablespoons). This is how we will prepare the dressing for the salad. Stir until the yolk breaks up into a fine fraction.
Add soy sauce (20 ml) and repeat the procedure. It remains to throw mustard grains (2 tsp) and freshly ground pepper mix for a bright flavor. Stir the dressing again until smooth.
Whites are cut into small cubes with a knife or egg slicer and put in a bowl with the salad.
In the same place you need to cut the chicken and the orange. The chicken can be used as a breast or a leg. Chop the meat into medium cubes or small strips, as in the photo.
The smoked leg has more ligaments, and the fillet has drier meat. There is no significant difference in taste, so this ingredient is almost equal for me. So, it’s up to you personally to determine your favorite.

Now peel and slice the orange. The size of the cube, of course, must match the smoked chicken. The orange is responsible for the sweetness and slight sourness, so it is often substituted for canned pineapple, which has similar qualities.
Lastly, pour the dressing into a bowl and mix the salad well.
Serve almost immediately before the orange drips and the lettuce leaves become crumpled. The salad has a perfect balance of sweet, sour and salty. It can be used as an accompaniment to a meal, or as a separate dish.
